Mr. potato head
I think this recipe should be called Mr. potato head, I mean just look at it :-)
This recipe is very simple and so tasty.
It's basically a potato that was emptied from its inside, filled with good stuff and baked.
You can fill it with whatever you prefer.
Bake a potato to each person and serve it with its cap on.
Your guests or family will take the cap off and will enjoy a yummy potato with an awesome filling.
And on another note, sorry for not posting for sometime now, I'm working on a huge project and hope to finish it real soon.

Ingredients:
Potatoes
grated cheese
pitted and sliced olives
Bulgarian cheese
fried onion

for vegan I've mixed:
Matbuha -spicy tomato spread
Canned chickpeas, drained and mashed

olive oil
salt

Preparation:
Preheat oven to 200C/392F  on grill and place the oven rack in one of the highest oven's positions.
Peel the potatoes and cut each potato into 2/3 and a 1/3.
Cut the edge of the 2/3 of the potato, so it will stand without falling.
Empty the potatoes from their inside with a teaspoon as much as you can, but not all the way through.
Fill with the fillings and close the cap of each potato.
Place on a baking oven and drizzle with olive oil and sprinkle with salt.
Bake for about 50 minutes and serve.
