Let's face it, oil in many recipes became some sort of seasoning. The flavor when frying is usually much tastier than when baked; But you can still get to the middle point, somewhere between baked and fried.
You can make recipes with a more balanced quantity of oil and get that delicious tasty dish. I used in this recipe only 1 Tbsp. of oil, and the dish came out so good that everyone was raving about it.

Sofrito is actually a casserole that cooks in one pot with the juices of the ingredients found in the pot. This pleasure cooks slowly, and the aroma spreading in the house and taste is just perfect. This casserole is the complete comfort on a diet.
I made this chicken sofrito dish with yams, potatoes, carrot, and different chicken parts.

 
Sofrito dish with chicken, yam, potato and carrot


Ingredients:
About 1 Tbsp. oil
2 Large onions, cut into cubes
6 carrots, washed thoroughly and cut into cubes
4 potatoes, peeled and cut into cubes
1 large yam, peeled and cut into cubes
salt and pepper to taste
Chicken parts, rinsed well (Chicken thighs, drumsticks, chicken wings - I used the pieces without the skin, but you can leave it on)

Preparation:
Preheat oil in a big pot. Add the veggies, season with salt and pepper to taste and fry on medium heat for 10 minutes. Mix occasionally. Take the vegetables out of the pot, lower the heat, and add the chicken parts with the skin side down.
If you used a lot of chicken parts, as I did, then not all of them will touch the bottom, and that's okay. Season with salt and pepper to taste and fry for a minute. Add the vegetables on top and cover with a lid. Cook on low heat for an hour or until the chicken and veggies are tender. Enjoy!
