Kanab, Utah and Beans Burrito

A year ago we had a trip to the US, and I really enjoyed it.
We traveled the west side and have been to so many beautiful places.
We actually really enjoy traveling and have visited some European countries, and any chance we have to make a low-cost trip, we take it.
I thought to myself, why not write about those unique places and share some of the pictures we took and bring some recipes that somewhat relate to those places.
So I've decided to start up with Kanab, Utah.

We had to pass through there during our journey, and I'm so happy we did.
Kanab is well known for its past use as a backdrop for many famous western movies, and you can see actual movie sets at the free Little Hollywood Movie Museum at Frontier Movie Town.

The Museum was delightful and, luckily, we were the only ones out there so we could goof around and take our time.

We visited on the day of the city fair, and it was lovely hearing that country music and mingling around with the very nice town residents.

I did a little research and found out that one of the towns' restaurants which are called Escobars, are serving beans burrito, so I've decided to make a beans burrito for the first time :-)

Ingredients:
1 - 2 Tbsp. olive oil
1 onion, diced
1 red bell pepper, diced
1/4 cayenne/chili pepper, diced or a few crushed chili flakes
1 yam, diced
About 1 1/2 cups red beans soaked for a night, rinsed and drained or best using canned cooked beans, rinsed
1/2 tsp. cumin
pinch of black pepper
1/2 tsp. salt
1 tsp. garlic powder
1/2 tsp. cilantro
About 8 - 9 tortillas
A bit olive oil
grated cheese (optional, but so good)

Preparation:
Preheat oven to 180C/356F.
Heat olive oil in a pan.
Add the onion and fry a bit till golden.
Add the cayenne pepper, red bell pepper, yam, and stir. (If using chili flakes, add when adding the seasoning).

Lower the heat and cook for 2 minutes. Add the red beans and spices and stir.
Cook for about 20 - 25 minutes and occasionally stir till the yam is soft, and the beans are edible.
*For the beans to cook thoroughly, you need to precook them in water and then add them to the pan with the yam. Alternatively, you can use canned cooked beans, rinse it a bit and add it to the pan 5 minutes before the yam is ready.
To save extra time, You can cook the yam in the microwave until soft (about 5-7 minutes). Then add the beans and the yam to the pan with the bell pepper and cook it for 5 minutes and that is it. Fill the burritos, bake, and they are good to go.

Place some of the mixture in a tortilla, sprinkle some grated cheese and fold like a burrito.
I don't know if that's the right way of folding a burrito, but I folded two parallel sides to the middle, leaving a square of
the filling visible, and then rolling the closest side to the filling
on top of it and continuing so till the other side.
Place the burritos on a pan and spray or grease with a bit of
oil and bake for 5 minutes or until crisp.
