Sabich Puff pastry

I love puff pastry. it's very versatile and no matter what you'll make with it, it will come out great.
I usually enjoy puff pastry filled with potatoes or some kind of salty cheese.
I've seen a recipe for Sabich puff pastry and really wanted to make it.

So what is Sabich actually?
Sabich is an Israeli sandwich, consisting of Pita stuffed with fried eggplants and hard-boiled eggs.

Why is it called Sabich?
Well some say Sabich comes from the Arabic word "Sa-bah" which means morning and 
they were typical ingredients in the Iraqi breakfast. 

Instead of the usual Pita, we use puff pastry and fill it with plenty of cheese, bake it and then fill it like a sandwich with fried eggplants and boiled egg.

Ingredients:
puff pastry
cheddar cheese, diced to cubes
Bulgarian cheese, diced to cubes
sesame
egg, beaten for brushing
slices of eggplants, fried
hard-boiled eggs

Preparation:
Heat oven to 180C/356F.
Cut square shapes out of the puff pastry and fill each square with cheese.
Close each square into a triangle by taking the upper right end side and placing it over the bottom left side. Tigethen the edges.
Brush with the egg and sprinkle with sesame.
Bake for 25-30 minutes and when done wait a little bit to cool. Cut the puff pastry on the side and fill with fried eggplant slices and sliced boiled egg.
