Moravian sugar cake

Moravian cake

I've found this Moravian sugar cake recipe in "The little French bakery" cookbook
by Susan Holding.
The cake looked really tasty, and with every recipe I want to make, i read the ingredients list, just to make sure it will be suitable for our taste buds.
When running over the ingredients list, I've noticed there are mashed potatoes in the cake.
We love potatoes, almost in every shape, so I've decided to try this cake and it turned out
really tasty.
The cake went a bit out of shape, because i didn't let it sit for the second rise, so don't
make the same mistake i did.
Moravian sugar cake
1 cup sugar
1 1/2 cups melted butter
1 tsp. salt
2 packets 1/4 ounce dry yeast
1 cup warm water
1 cup mashed potatoes *
2 eggs, beaten
6 cups flour
1 1/2 cups brown sugar
5 tsp. cinnamon (I've added only 1)

*I've started by making a mashed potato, by cooking 2 small potatoes in water
and then mashing them.
Add the dry yeast into the warm water and set aside.
Mix together the sugar, salt, eggs and one cup of the butter.
Add the mashed potatoes and flour - one cup at a time and mix.
Add the yeast mixture and mix well.
Transfer to a greased bowl and let rise for 1-2 hours.
Preheat the oven to 175C/350F.
Press the dough into a greased pan, cover with a plastic wrap and let rise until it doubles.
Make dimples in the dough and sprinkle with brown sugar and cinnamon.
Pour the butter on top and bake for 20-30 minutes, until a toothpick inserted into the center
comes out clean.
