Ingredients:
Oil for frying
1 medium onion, cubed
4 large tomatoes with their juice, cubed
4 large carrots, cubed
3 large zucchinis, cubed
4 medium potatoes, cubed
1 medium sweet potato, cubed
1 red bell pepper, cubed
6 garlic cloves, minced
100-gram tomato paste
water
salt
black pepper
1 Tbsp. dried parsley

I love matzo balls, and usually, we eat them in chicken soup.

The matzo balls are without any preservatives and no food coloring, and they are airy and very delicious.
You can make them in the soup, but for my convenience, I've made them in a different pan according to the package.
I made this recipe with pasta. However, to make this a kosher for Passover, omit the pasta, and there you have a tasty Passover soup.

Minestrone soup with store-bought matzo balls/recipe: con delight
Ingredients:
Oil for frying
1 medium onion, cubed
4 large tomatoes with their juice, cubed
4 large carrots, cubed

Matzo balls, store-bought mix
Preparation:
Preheat a pan with a bit of oil.
Add the onion and fry until golden.
Add the tomatoes with their juice and cook a few more minutes.
Add the rest of the vegetables, the tomato paste, and water to cover the veggies. You need to cook until the veggies are soft, or about 30 minutes.
About halfway through the cooking, season with salt, pepper, and parsley. After 30 minutes, add the pasta and cook 10-15 more minutes or to your choice of doneness.
While the soup is on the stove, prepare the matzo balls according to the package and serve.
