This vegetable tray is the easiest side dish you will ever make. It is wonderful and delicious, and I usually like serving it alongside a salmon.
I have many recipes on the blog using salmon. But this recipe that is found on my blog since 2015 is the one I usually serve with these veggies - mustard and sugar salmon.
So how can you make these super easy baked vegetables in 3-ingredients sauce? Very straightforward and relatively healthy.
You can use fresh vegetables or frozen to quicken the process. The one thing you should not compromise is mixing the two varieties on the same pan.
Place the fresh vegetables on one pan and the frozen vegetables on the other.
Baked vegetables in 3-ingredients sauce/recipe: con delight
Ingredients:
Use whatever vegetables you prefer; I used:
2 yams, peeled, rinsed, and sliced
About 10 small potatoes, peeled, rinsed, and sliced
2 zucchinis, peeled, rinsed, and sliced
1 eggplant, rinsed and sliced
Frozen veggies, such as cauliflower, broccoli, peas, green beans, etc.
Sauce:
Sweet chili sauce
Soy sauce
salt, to taste
Preparation:
1.Preheat oven to 200C/392F, turbo (fan mode).
2.Mix the fresh sliced vegetables in a bowl.
3. Pour 3 tablespoons of sweet chili sauce, 4 tablespoons of soy sauce, and salt to taste.
4.If you prefer a more robust flavor, add more sauces to your liking.
5.Mix well and arrange in a pan with baking paper, unless you're using pyrex.
6.Do the same with the frozen vegetables - transfer the frozen veggies to a bowl (no need to thaw or cook the veggies).
7.Pour the sauces on top with the salt, and mix. Careful it will be freezing.
8.Transfer to a separate pan.
9.Bake for one hour.
10. Serve with salmon or any other meaty or other dishes of choice.
