So what is a no-bake cheesecake really?
Simple - a cake that never saw the inside of the oven. But sure seen the inside of your belly ;-)
I created this recipe using lotus biscuits as the crust, but you can use shortbread cookies as well. If you need to take some aggression out on your cookies, then you can alter the crust and instead of using whole biscuits, just crumble them using a food processor or better yet beating it using your rolling pin and mixing it with melted butter.
The filling is made from very simple ingredients: cream cheese, dulce de leche spread, sugar and heavy cream. And it contains just the right amount of sweetness in it. You can adjust the sweetness, according to your liking.

This cheesecake recipe doesn't contain gelatin of any form and is set wonderfully after a night in the fridge.
Just before serving, you had that extra touch of crunchiness and beautifulness using a lotus biscuit as decor on top of each slice. And if you want it to be more chocolatey, add a sweet drizzle of store-bought chocolate sauce or homemade one using a mix of heavy cream and bittersweet chocolate melted together in a microwave-safe dish.

You can serve this one on every occasion if it's as an accompaniment to a birth day cake, a lovely welcoming to new neighbors or any holiday or event coming up your ally.
We make plenty of dairy desserts to celebrate our Shavuot holiday, and this one is just perfect when you don't have much time to prep something, but still want to dazzle everyone.


Ingredients:
Base:
19 small lotus biscuits

Filling:
225 gram /8-ounce cream cheese
200 gram / 7 ounce Dulce de leche
1/4 cup sugar
250 ml /8.45-ounce whipping cream

Decoration:
Lotus biscuits

Preparation:
Cover a 30X30cm pan (around 12X12 inch pan) with foil and then with parchment paper so that you can take the cake out of the pan easily (but still be very careful).
Arrange the biscuits on the pan.
Mix together the cream cheese and Dulce de leche.
Whip the whipping cream until steady and then add the sugar
and mix until blended.
Take 1/3 of the mixture and mix into the Dulce de leche mixture
and then fold in the rest of the whipped cream.
Transfer onto the biscuits and smooth the surface.
Place in the refrigerator for the night and when serving,
decorate with a lotus biscuit or a nice drizzle of chocolate sauce.
