Healthy Chicken and Broccoli stir fry recipe


This Chicken and broccoli stir fry is just perfect and makes an easy-fix meal. In less than 30 minutes, you'll have a tasty dish with just a little bit of oil.

Usually, stir fry is made with chicken breast, but I decided to make this dish with deboned chicken thighs/drumsticks without the skin (also known as pargiot in my region). These cuts give you the option to make an error because if you don't take good care of your chicken breast, you can end up with a very dry dish. And with chicken thighs, there is no problem. Since they consist more fat, they are more likely won't get dry, and you will get a juicy and enjoyable dish.

If you don't love broccoli, you can add to the dish any vegetable you prefer (zucchini, red bell pepper, etc.), but I highly recommend giving it a go even if you are not a broccoli lover, because it is just so good! You can, of course, add vegetables as much as you want. I will probably add more broccoli on the next batch I will make.

Chicken stir fry with broccoli / by con delight
Ingredients:
200-gram (7.05 oz.) frozen broccoli, cooked in hot water for about 5 minutes and strained
About 1 Tbsp. oil
about 700-gram (24.7 oz.) pargiot (deboned chicken thighs/drumsticks with no skin), cut into pieces
2 Tbsp. teriyaki sauce
1 Tbsp. sweet chili sauce
1/2 tsp. salt
1/4 tsp. black pepper



Preparation:
Preheat oil in a pan and when the oil is hot, add the chicken cuts. Fry on high heat on both sides until almost all is white, stir occasionally.

Add the broccoli and mix. Add the other ingredients, mix and cook on high heat until done or for 3-5 minutes. Keep stirring every now and then.
