This recipe of sfenj is non-dairy and suitable for vegans too. It is terrific when celebrating mimouna or Chanukkah, and any other day when you're longing for carbs, really.

My recipe is based on the recipes of two wonderful women - Yonit Tzukerman and Carine Goren. A combination that created crispy sfenj doughnuts on the outside and soft and fluffy from the inside.

What should you know before making this sfenj?
👌 This recipe of sfenj is really sticky, and that's completely fine. Work with greased hands before making each sfenj.
👌 Don't make more than 10 sfenj of this amount. If you make tinier sfenj doughnuts, they will absorb more oil and become very greasy. They will still be good but very greasy.
👌 The alcohol is there to prevent excess oil absorbed. Especially in a sticky dough like this, so please don't give up on it. And don't worry, the alcohol fades while frying.




Homemade Sfenj/recipe: Con Delight
I measured using universal cups and spoons
Ingredients for 10 sfenj:
500 grams of white flour, sifted
1 Tablespoon dry yeast
1/4 cup white sugar
1/2 teaspoon salt
1/4 cup oil
2 cups of water
1 Tablespoon of vodka

oil for frying and for greasing the hands
Sugar, for coating


Preparation:
1. Mix the yeast and flour.
2.Add sugar and salt and mix.
3. Add the oil, water, and vodka, and knead in a stand mixer for 7 minutes. If needed, stop the machine and help the dough using a spoon.
4.The dough is super sticky, and that's fine.
5.Cover with cling film and let rise in the fridge for the night or at least 4 hours in the refrigerator.
6.Preheat oil to 160C.
7.Using greased hands, take a piece of the dough and form a smooth ball as much as possible. Make a wide hole in the middle and place it carefully in the oil. If you messed it a bit, use a wooden skewer to correct it (see attached video).
8.Fry for 2 minutes on each side.
9.Very important - don't make tiny sfenjs. Otherwise, they will absorb a lot of oil. The amount should do for about ten sfenj doughnuts.
10.Once done frying a sfenj, place on a paper towel. Then, while still hot, carefully dip in sugar, or you can sprinkle powdered sugar.
