Take out your ice cream maker and have a delicious homemade Oreo cookie vanilla ice cream made without sweetened condensed milk. Of course, you can make this without an ice cream machine (thorough explanation ahead).
I bought an ice cream machine last summer and because it is the cheaper type, meaning no fixed freezing body, but a bucket that has to be placed in the freezer for 12 hours before using.
I tried it last summer, but for some reason, I didn't get any ice cream (I guess it's the summer to blame - too hot).
Because we love ice cream even in the winter, I gave the ice cream maker another go, and we got a wonderful vanilla and cookies ice cream.
Although I didn't get ice cream that one can eat at that very moment, after a couple of hours in the freeze, I got tasty ice cream with excellent texture.
And what else great about it? The fact it doesn't contain sweetened condensed milk. It has only 3 ingredients, and it is delicious! And you can also make it parve, dairy-free using vegetable whipping cream.
How to make Vanilla-cookies ice cream/recipe: Con Delight, based on this recipe
I measured using universal cups
Ingredients:
3 or 4 cups of whipping cream*
1/2 cup sugar
Oreo cookies vanilla filling
Preparation:
Add whipping cream and sugar into the ice cream maker. Churn for 20 minutes or as much as needed. Add Oreo cookie crumbles and mix couple more minutes.
* I sometimes use 3 cups of cream and sometimes 4 cups. It depends on the desired level of sweetness (3 cups is sweeter).
Grab a scoop or two and enjoy :-)
And if I don't have an ice cream machine?
Although I have not tried making this recipe without an ice cream machine, it should work fine with a mixer.
Just keep these two rules:
1. Whip the cream and sugar together to a stable soft peaks whipped cream. Transfer to a sealed plastic container and freeze for 15 minutes. Take out, whip again, and back to the freezer again. Continue so for 3-4 times, adding the cookie crumbs at the last time, and freeze.
2. Very important! - when placing the ice cream in the freezer, store it in a sealed plastic container.
Aluminum container? No! sealed plastic container :-)
I'm talking from my experience. If you store it in a metal bowl, you'll get ice crystals in your ice cream. This rule applies when making ice cream with an ice cream machine or with a mixer.
