Potato salad is one of my favorite salads. But it doesn't look that good, and you can barely take a decent shot of it.
So I tried my best in taking shots from its best side, and there you have it - my potato egg salad.

When I eat a pastrami sandwich, I like using brine pickles. But when I want it to be unique, I use vinegar pickles.
I received to review three products by Tomer company to celebrate Lag Ba'Omer: pickled eggplants, natural black olives, and cornichons.
I'm familiar with the cornichons of Tomer since I tend to buy them often. I decided to use them in this potato salad recipe, and it came out wonderful.

If you ever googled how to make potato salad with egg, you came to the right place. My potato salad contains: potatoes, obviously, and carrots and peas, hard-boiled eggs, mayonnaise, salt, cornichons - vinegar pickles and vinegar.

Before we get started, a few notes:
👌 Do you want your potato salad without hard-boiled eggs? Omit it.
👌 Do you want your potato salad vegan? Skip the hard-boiled eggs and replace the mayonnaise with a vegan alternative.
👌 Do you want your potato salad with other additions? No problem! Add whatever ingredient you love. You can add chopped onion, scallions, dill, mustard, etc.

Potato salad with eggs and mayonnaise/recipe: Con Delight
I measured using universal cups 
Ingredients:
1 large potato, peeled, cut into cubes
A can of carrot and peas, 550 grams before straining - strain from liquids
2 hard-boiled eggs, cut into cubes
cornichons - vinegar pickles, about 20 units (1 cup) or whatever you prefer, cut into small cubes
Mayonnaise, about 1/2 cup or as you prefer
Salt, according to taste
1 Tablespoon vinegar or according to taste

Preparation:
1.Transfer the uncooked potato cubes to a microwave-safe bowl and cook for 6-7 minutes or until soft.
2.In a different bowl, combine the carrot and peas, hard-boiled eggs, vinegar pickles, and potatoes.
3.Add in the mayonnaise, vinegar, and salt (start with about 1/2 teaspoon) and mix. Taste and correct flavor if needed.
4.If you like other addition, then add and omit according to your liking. You can add scallions, chopped yellow onion, dill, mustard, etc.
5.Keep in an airtight container in the fridge.
