Perfect Frittata - homemade meal for one person or a couple

You can say this is somewhat of a continental breakfast or a fantastic easy dinner, but one thing is for sure, it is so enjoyable and effortless to make! - perfect and beautiful frittata.

I think the most challenging thing here is to flip the frittata. My first try, as shown in the cooking tutorial, was excellent, but then I sometimes messed it. Despite a few wrong flips, it is still very easy to make and highly recommended.

Frittata is the Italian word for "fried," and this is an Italian dish that consists of an omelet with toppings. And basically, once you cooked one side of the frittata, you should place it in the broiler for a couple of minutes.

Because I don't have a grill mode in my oven, I decided to flip the frittata in the pan and continue cooking on the stovetop. I think it is much tastier like that, but that's just my opinion :-)
 




Frittata/recipe: con delight
I measured using universal cups and spoons
Ingredients:

about 1 Tbsp. olive oil
2 XL eggs or 4 L eggs
1 Tbsp. Fresh parsley. chopped
1 small yellow bell pepper, cubed
1 small orange bell pepper, cubed
1 small onion, chopped
about 1/4 cup grated Parmesan
about 1/4 cup crumbled ricotta (or use cottage cheese)

Preparation:
1.Mix all of the ingredients except for the oil.
2.Preheat the oil in a pan.
3.Once hot, add the batter and flatten it to the size of the pan. 4.Cover and cook on low heat for about 5 minutes. If you prepare more eggs, the cooking time will take longer.
5.After about 5  minutes, flip the frittata using a spatula. Be very careful and decisive when flipping, so you won't break it. 6.Cover and cook for another 2 minutes.
7.Serve with vegetables, cottage cheese, or cream cheese and orange juice.
