Here's a recipe for a wonderful baked vegetable pie made of carrot and zucchini strips.
This pie is delicious and great year-round, and even for the Nine Days of Av month when you're looking for something nutritious and tasty to eat.

Carrot and zucchini vegetable pie/recipe: con delight
The measurements were made using universal cups and spoons
Ingredients for rectangular pan 23X32X5cm (around 9X13X2inches)
4 zucchinis or courgettes, skinned or thoroughly rinsed, peeled to strips
4 carrots, skinned, peeled into strips
1/2 cup oil
5 L eggs
1 cup flour
About 2.5 teaspoons salt or according to flavor
A bit of black pepper
optional: herbs such as parsley or any favorite

Preparation:
Preheat oven to 180C/356F, turbo.
Mix all of the ingredients and transfer to a pan. Bake for an hour or until the pie is ready. Serve warm or cold; either way, it is delicious.
*I make this pie with salt and pepper only and no other spices. Make as you like and prefer and enjoy!

** Sometimes, I bake my pies in a 200C/392F, since my oven tends to golden them more in that setting (baking time is less of course). Bake at the best setup you're familiar with your oven.
