I found a cake that resembled the one we had in Greece. However, it was dairy, and the one we had was a non-dairy, parve cake. It also contained a significant amount of sugar.
So I decided to make some changes to it, and I got an incredibly moist and slightly sweet apple cake recipe made with fresh apples and a crackling sweet crust and a moist and light base.
The cake didn't come out exactly like the one we so enjoyed in Thessaloniki, Greece. However, it is so tasty that you ought to make it.
Another thing that is great about this cake is the fact that the apple taste is not that noticeable.
Since I grated the apples, the cake has a mild apple taste to it, making it perfect for those who don't like fruit cakes.

Ingredients for rectangular pan 23X32X5 cm (9X132 inches)
Measurements were made with Universal cups
4 Granny Smith apples, peeled and grated
1/3 cup canola oil
2 L eggs
1 tsp. vanilla extract
1 cup brown sugar
2 1/2 cups of sifted white flour
1 tsp. baking soda
Topping:
1/2 cup white sugar
1 tsp. ground cinnamon
2 Tbsp. canola oil
Preparation:
Preheat oven to 180C, turbo (356F).
Mix the grated apples with the eggs, oil, and vanilla extract. Add in the brown sugar, flour, and baking soda and mix well.
Transfer to a baking pan. If you use an aluminum pan, grease it slightly.
Mix the topping ingredients and sprinkle of top of the cake—Bake in the middle rack of the oven for 25 minutes.
You will get a moist, beautiful, and tasty apple cake. Keep in an airtight container outside the fridge for 2-3 days and even more.
